Airborne Kitchen Grease (AKG) is a costly by-product of commercial cooking with many hidden impacts. This presentation will teach you how to identify and monetize those impacts. Each individual piece of cooking equipment generates a unique type and volume of grease creating unique buildup problems that can impact a restaurant’s air balance. If not properly handled these buildups can impact the entire performance of your facility and can drastically increase operating expenses and energy usage. We will examine the impacts of reduced airflow, increased fire hazards, labor costs/effectiveness of cleaning this grease and the environmental impacts associated with removing it.
